I encountered Just Velvet at the 41st Annual Atlantic Antic. The Antic is a street fair on Brooklyn’s Atlantic Avenue from Hicks Street to Fourth Avenue every fall. I love it as it features mostly local vendors rather the random sock sellers and such that pop up at some NYC street fairs. It’s always good for tasty treats, crafts, music and local flavor (and if you’ve lived in Brooklyn for long, you’re sure to run into a friend or two)!

There were many tempting offerings, but I chose the Cruel Velvet Carrot Cupcake with some prompting from my husband. It was moist and carroty with plump raisins at the bottom, a delightful dessert.

Beside the Cruel Carrot Velvet, other “velvets” offered include an Island Velvet (coconut) and, of course, a Just Red Velvet. I also have my eye on her Hot Cappuccino Cake.

Cupcakes for a 6-year-old boy’s Minecraft-themed birthday party

As I have tended to concentrate more on flavors than decorating, this was my first time working with gum paste for my own cupcakes. Gum paste is similar to fondant except it dries hard. (I also think it tastes a little bit better, but it still doesn’t taste wonderful!) That makes it more appropriate for detailed decorations.

I drew a 1 cm grid on parchment paper to provide a guide, flipped it over and taped it to a white cutting board. That gave me a clean and stick-resistant area to work.

The gum paste was white, so I colored a batch with food coloring gel to a light green before rolling it out onto my grid. (Note: Use gloves if you don’t want your hands colored like mine were! The easiest way to color is to work the gel into the paste by hand.) I used a pastry cutter to cut out 5×5 cm squares. I scored them gently with a grid, not cutting all the way through, to provide the base for my Creepers.

I colored other batches of gum paste a darker green and black for the details, cutting 1×1 cm squares.

I applied water with a brush to glue the small squares onto the larger to make my Minecraft Creeper cupcake toppers and let them dry overnight.

The cupcakes were dirt-color (chocolate!), and vanilla buttercream attached the Creepers. As creating the toppers were time consuming, I made enough for half the batch, piping buttercream “grass” onto the rest.

The birthday boy was delighted with his Minecraft cupcakes, it was totally worth staying up late and dyeing my hands green and black!

Gum paste may harden, but it wilts in the summer sun! The birthday party guests didn’t seem to mind at all.

butterscotch apple cupcakesI’m known for cupcakes and rarely is anyone surprised when I bring cupcakes to an event. However, sometimes I can be a little crafty.

A friend organized a last minute birthday dinner, and I whipped up a quick half batch that fit in a smaller container than my normal carrier. I was able to conceal the cupcakes for an afternoon of birthday pampering and most of the meal. Ha! I was pleased that the birthday girl was surprised.

For these cupcakes, I used an apple cupcake recipe from Chow, adding some butterscotch extract and using coriander instead of the other spices. I topped them with butterscotch buttercream frosting.

I’d bought the butterscotch extract at Olive Nation on a whim and had been waiting for an excuse to use it. It paired well with the moist and not-too-sweet apple cake.

My cousin-in-law had her baby shower at Brooklyn Bridge Park on what turned out to be a beautiful day by the river. The Picnic Peninsula at Pier 5 has grills, which made it the perfect spot to set up a BBQ celebration. I baked mini vanilla cupcakes with blue-tinted icing for the occasion.

Planning a Pier 5 BBQ? Get there early to reserve a space (the park is open 6am-11pm; grilling is allowed until 10pm)! And note to party decorators, nothing is allowed to hang from or otherwise be attached to the umbrellas. We learned this only after completely decorating and being made to take everything down.

The happy, healthy boy himself has now arrived. I hope he has a sweet tooth (when he’s a teeny bit older)!

Brett and Margaret Wedding CupcakeI was honored to be asked to bake wedding cupcakes for my friends Brett and Margaret. They set up a fabulous weekend in the Catskills for the big event, which was unique, relaxed and great fun, just like the couple.

The bride and groom requested my chocolate with vanilla frosting. I did ask if they wanted something fancy or a new flavor, but a tried-and-true flavor was just fine with me, I was happy to oblige.

I baked the cupcakes the night before our drive upstate and brought along a pound of butter, 4 pounds of powdered sugar, and a bottle of vanilla extract to make the frosting on site. Decorating supplies including small edible silver dragées and dark chocolate shavings completed my wedding cupcake prep kit.

Recruiting a friend to help, I ran some tests to set a decoration plan. The goal was festive wedding vibe that wouldn’t look out of place at the rustic venue. And I wanted them to look special for the very special occasion.

Sprinkling the dragées didn’t get good coverage, I preferred a solid silver layer. It ended up working best to ice with a knife, dip and swirl (like glue and glitter). We added a pinch of chocolate shavings in the middle for fun. When we ran out of dragées, we covered with the chocolate shavings—again dipping after icing—and added silver sugar sprinkles.
