How to Eat a Cupcake, by a One-Year-Old Boy
As I plan the cupcakes for the second birthday of this adorable child (not mine!), I’m thinking back to last year. It was his first encounter with cupcakes, and I’d say it was a smashing success.
The icing for these mini cupcakes had a high content of pure chocolate. It was basically like melting a chocolate candy bar on top of the cupcake. It tasted great with the yellow cake, but it did not stand up to the hot day in the park, melting into a gooey mess even without the help of toddlers. If I used the recipe again for a non-climate-controlled party, I would add significantly more powdered sugar for a stiffer icing and/or keep the cupcakes in an ice chest.
